I have a weight matrix that represents the affinity between each pixel in an image. I want to partitioning this matrix to obtain segments. Is there any chance to use METIS in this process?

If you are interested in balanced partitions, then Metis can in principle be used. You may also want to look at Cluto (http://www.cs.umn.edu/~cluto) as well.
